Updated: Jul 22, 2020

Have you ever wondered why Naples, Italy is the hub for pizza? Pizza in Naples is not just a dish but a symbol of Italian culture and a history. For instance, the famous Margherita pizza was invented in 1889 for Queen Margherita. Since then, Italians have perfected this famous pizza as well as several other Neapolitan-style pies and have made them popular in various parts of the world. People may have had hundreds or thousands of pizzas in their lives, but few have had the opportunity to try an authentic Neapolitan pizza. Here at Provence Pizza, we use only the finest ingredients and a wood-fired oven to make Neapolitan pizzas that are to die for!

You may be wondering, however, what is the key to making the best Neapolitan pizza and why is it so special?

1- The Dough: The most important element to making a great Neapolitan style pizza is the dough. Here at Provence Pizza, our Neapolitan pizza is known for its unique flavor and thin-style crust. In order to make an authentic Neapolitan style dough, one must only use four simple ingredients: flour, water, salt and yeast. These ingredients are then mixed together and put to rest for 6-12 hours to allow the dough to rise. At Provence Pizza, we put great care into developing our dough to ensure that it comes out perfect every time. Every day, we feed our dough to give it our signature slightly-sourdough taste that customers love!

2- Simple and Fresh Ingredients: The best Neapolitan pizza uses only fresh tomato sauce mixed with basil, salt, and extra virgin olive oil, topped off with fresh Mozzarella, basil leaves, and parmesan. Our tomato sauce is always made in house, and we pick only the finest cheeses to top our pizzas.

3- Wood Fired Oven: Fresh thin crust pizza must be cooked in an extremely high temperature oven, generally around 800-1000 degrees Fahrenheit. With these temperatures, a pizza can typically be cooked in less than 2 minutes. Cooking our pizzas in our wood-fired oven help to give them their unique taste and perfect texture.

At Provence pizza, we develop our yeast and we feed it every day to give it a unique taste of slightly sour. Combining it with our fresh tomato sauce made in-house, and varieties of fresh ingredients such as fresh mozzarella and hard Parmesan. We have our unique touch!
